I was a meat packer, at the meat co.The meat company catered to high-priced restaurants, dinner houses.We dealt with 16 oz. Steaks,such as:T-bone steaks,porter houses,New york steaks,Prime Rib,Pork chops,New Zealand lamb chops,Top Sirloin steaks,5oz,4oz,3oz hamburgers.The best kind of meat is center cut, nearest the bone. a little bit of fat for cooking.for flavoring the meat. I learned how hamburgers and hot dogs were made. They are made from waste from fats and what  meat cutters cut from other meats.They are put into grinder.Here are some photos of the meat I have been talking about:
